In the kitchen, as in almost anything in life, we can get as complicated as we want, but it also happens the other way around. We can make things as simple as we want without having to sacrifice final quality. One of the recipes I like to make the most at home is the homemade pizza recipe, but homemade does not mean making it in such a way that it does not deserve a place of honor at our table.
With pizza we can complicate everything we want. For example, we can make a pizza with a specific flour, or mixing flours. We can make the pizza with a cold fermentation, with several fermentation, we can add sourdough, or put a yeast or another. We can make pizza with very elaborate tomato sauce, we can use stone for the oven, some ingredients or others, etc.
To give you an idea, a pizza can be as complicated as we want and also as simple. Today we have decided to make a very simple pizza, with the idea that all of you can make it at home simply by following the steps and advice that we are going to give you here.
Ingredients
300 g flour
160 g of water
5 g instant baker's yeast
20 g of extra virgin olive oil
1 teaspoon salt
200 g tomato sauce
100 g of mozzarella
100 g of York ham
Step by step to make pizza
In a bowl we put all the ingredients of the dough: flour, water, yeast, oil and salt and mix well with a spoon. A pizza dough is like a simple bread. It can be made with any type of flour and the amount of water will be approximately half that of flour. If we use a flour with more gluten (strength flour) then we will need a little more water and if we use a normal flour (like today) with half the water (per flour) and a little more will suffice.
Then we will go to knead. If we have a great mixer because we won't have to do much. If we do not have the only thing we will do is stretch the dough and collect with the palm of your hand until you get a dough that does not stick to your hands or the table, it is a thin and elastic dough. Between 5 and 10 minutes will be more than enough. No need to flour the table.
Then we will leave the covered dough to ferment. The goal is to double the volume. And that when it does? The answer is simple, if it is cold it will take longer than if it is hot. Or on the contrary, if it is hot it will take less. The best dough's the longer it takes the better because the dough develops differently, but with our pizza without complications we will not care. We leave it and when it rises to double we will continue on to the next step.
Now that our dough has grown enough we can continue. We take the dough and degas it, that is, we knead it lightly so that it returns to its initial volume. We can go to divide it to make small pizzas or make a large one. To stretch it without complications we stretch it with our hands as we can or with a roller, the shape is the least, if it comes out square if you get a great round dough. We will add the ingredients, first the tomato, then the cheese and the rest of the things we want to add.
The last step is that of the oven, and it is not the least important. With the oven preheated to a minimum of 23 ºC we put the pizza. We can use a stone for the oven or a tray. If we have stone, the pizza base will be more crunchy but we do not have to complicate our lives, they are very rich in any tray you have.
Bake for about 8-10 minutes, until lightly browned.

We can add fresh yeast or even sourdough, but with dry or instant bakery yeast it works very well.

We will bake in a strong oven until golden. If you don't have an oven stone, nothing happens.
